Hara Bhara Kebab - Potato Spinach Starter

Hara Bhara Kebabs are a popular vegetarian starter made with spinach and potatoes. Some people also add green peas to it, to enhance the colour of the dish. This is a simple dish to make and is healthy as well.
Hara Bhara Kebab is a quick energy booster snack which is relished by people of all age groups. It is a great evening snack. Even the kids who do not like eating green leafy vegetables will surely love this dish. So let's get started!
Hara Bhara Kebab Recipe-
Preparation time: 15 minutes
Cooking time: 20 minutes
Serving: 10 kebabs
Ingredients:
- 2-3 medium-sized potatoes
- 3 cups spinach
- 1/2 cup coriander leaves
- 2 green chilies (finely chopped)
- 1 tbsp ginger
- 3 tsp oil
- 1/4 cup bread crumbs
- 1/2 tsp red chili powder
- 1 tsp garam masala
- 1/2 tsp chaat masala
- Salt as per taste
Method:
1. Pluck and rinse the spinach well. Then transfer it to a colander to ensure that the excess water has drained out.
2. Boil the potatoes in a pressure cooker until they turn mushy (3-4 whistles). Let them cool completely before peeling.
3. Pour 1 tsp oil into a pan. Add garlic and green chilies to it. Saute them for a minute.
4. Then add spinach to the pan and saute till it wilts out completely.
5. Turn off the flame and let the mixture cool down.
6. Add the above mix to a blender, along with coriander leaves. Blend them into a smooth paste, without adding any water.
7. Mash the potatoes in a bowl and then add the above paste to it.
8. Add salt, garam masala, chaat masala, bread crumbs, and red chili powder to the above mixture. Mix all of it together into a non-sticky dough.
9. Divide the dough into small portions and roll them into balls. Flatten them to shape like patties or kebabs.
10. Heat a pan with 1 tbsp oil. When the pan turns hot, place the hara bhara kebabs on it and pan-fry them until golden and crisp. Flip them over once the first side is properly cooked.
11. Serve hot Hara Bhara Kebabs with mint chutney, yogurt cilantro chutney, or ketchup.
Notes-
1. You can substitute bread crumbs with powdered poha.
2. You can also deep fry them if you want. Incase the kebab breaks, add more bread crumbs to the mixture to avoid the same.
3. You can preserve the leftover kebab dough in the refrigerator and prepare kebabs as required.
Hara Bhara Kebabs can be baked or grilled as well. You can make it as per your convenience. It is surely a great appetizer to have on your party menu.
