Honey Chilli Potato - Restaurant style starter

Honey Chilli Potato is one of those few appetizers which is a hit among people of all age groups. It is an addictive snack which you can keep eating, without realising how much you've actually eaten! It sure is among the menu options for any party.
The perfect combination of sweet and spice is what makes this dish please everyone's taste buds. This picture highlights a form of food photography. You would have already seen it in my first post. So let's get started with the recipe for Honey Chilli Potato.

Honey Chilli Potato Recipe:
Preparation time: 5 minutes
Cooking time: 25 minutes
Serves: 3-4 people
Ingredients:
For Crispy Potatoes-
- 4-5 medium potatoes (peeled and cut into fingers)
- 1/4 cup rice flour (chawal ka atta)
- 2 tbsp corn flour
- 2 tbsp all purpose flour (maida)
- 1 tsp black pepper powder
- Oil for deep frying
- Salt as per taste
For Honey Chilli Sauce-
- 2 tbsp oil
- 2 tbsp garlic (finely chopped)
- 1 green chilli (finely chopped)
- Corn flour and water slurry (1 tbsp corn flour + 1/4 cup water)
- 1 tbsp soya sauce
- 1 tbsp vinegar
- 1 tbsp chilli sauce
- 2 tbsp honey
- 2 tbsp sring onions (green part only)
- 1 tsp white sesame seeds (til)
- 1 tsp chilli flakes
- Salt as per taste
Method:
1. Wash the potato fingers well under running water and soak them in water for 10 minutes, to remove excess starch.
2. Boil water in a saucepan, add a pinch of salt and potato fingers to it. After 5-7 minutes, strain the water, keep the potato fingers aside and let them cool completely.
3. In a bowl, mix corn flour, rice flour, all purpose flour, salt and black pepper. Coat the potatoes evenly, with this mix. Do not use water.
4. Heat oil for deep frying, on high flame. Fry the potato fingers in small batches until crisp and remove them in a colander.

5. Once the fingers cool down, coat them again with the same mix as mentioned in step 3 and fry them again. Once done, transfer them to a colander and set aside.
6. Heat oil in a stir fry pan, for preparing the sauce. Add garlic and green chilly. Fry on high flame for a minute.
7. Add soya sauce, vinegar, chilli sauce, sesame seeds, chilly flakes and salt to the pan. Now add the corn flour and water slurry to it.
8. Once the sauce starts thickening, add the fried potato fingers, spring onions and honey. Mix well and turn the flame off.
9. Serve the Honey Chilli Potato immediately, it tastes best when crisp and hot.
Notes-
- It is important to cut the potato fingers evenly, so that they cook evenly.
- Double fry the fingers in the same oil used for the first batch. Do it carefully, so that they do not burn.
- After frying, transfer the fingers to a colander or basket, rather than a plate. This way they remain crispy and excess oil drains out.

Do ensure to eat them quickly as they are crispy at that time. You can also add onion and capsicum to add more flavour to this dish. Following the cooking tips will ensure that you don't cry while cutting onions! 😜
