Mini Uttapam | Rice-Lentil Pancakes

Uttapam or Oothapa is a common Indian breakfast recipe. It is a part of the South Indian cuisine. It is prepared with rice and urad dal batter, which is used in preparing idli and dosa. Hence, it is also known as rice-lentil pancake.

However, Uttapam is slightly thicker than dosa. It can be topped with vegetables like onions, tomatoes, carrots, green chillies, etc. Mini Uttapam pans are also available in the market. But today, I'll share with you how to make mini uttapams without it.

Mini Uttapam Recipe:
Preparation time: 5 minutes
Cooking time: 15 minutes
Serves: 4 people

Ingredients:
  • 3-4 cups idli/dosa batter (home-made or ready-made)
  • 1 cup onion (finely chopped)
  • 1 cup tomato (finely chopped)
  • 2 green chillies (finely chopped)
  • 2-3 tbsp coriander leaves (finely chopped)
  • Oil for shallow frying
  • Salt as per taste
Method:
1. Mix onions, tomatoes, green chillies, coriander leaves and salt in a bowl.
2. Heat a non stick pan or iron tawa on medium flame. Add few drops of oil and spread all over the pan.
3. When the pan is ready, pour one ladle batter and spread it in round shape by rotating the ladle in one direction (you can make as many as 4-5 uttapams in one go, depending on the size of your pan)
4. Sprinkle the vegetable mix made in Step 1, over the batter. Let it cook for 1-2 minutes, until the bottom surface becomes light brown.
5. Add little oil from the sides and flip the uttapam. Let it cook for another minute and then transfer it to a serving plate.

6. Repeat the same process for the remaining batter and your uttapam or rice-lentil pancakes are ready!

Notes-
  • While heating the pan (Step 2), spread the oil using a halved small onion or potato. This step eases the process of spreading the batter and flipping it.
  • The batter spread should not be very thin, otherwise the vegetables will not bind with it.
  • It tastes best when served with mint chutney, coconut chutney or tomato ketchup.
  • The batter remains good for 2-3 day (when refrigerated).
The best part of this recipe is that you can use any vegetables of your choice and according to their availability. You can also add cheese to it, to make it more tempting. Overall, it is a healthy and easy to make dish.
