Mango Rabdi - The Summer Dessert you cannot miss!

Mango Rabdi is a traditional Indian dessert, which is a heavenly combination of mango puree, milk and saffron. This rich and fruity dessert, is perfect for any occasion. This dish will surely make your heart go "Yeh dil maange Mango more!"
The king of fruits - Mango, is flexible to be used in different combinations from pickles to desserts. Since a lot of you had asked me for this recipe after my first post, I decided to share this mangolicious recipe today. So let's get started!

Mango Rabdi Recipe:
Preparation time: 5 Minutes
Cooking time: 30 minutes
Serves: 5-6 people
Ingredients:
- 1 litre full cream milk
- 1 cup mango puree (fresh and thick)
- 1/4 cup sugar
- 5-6 strands of saffron (kesar)
- 1 tsp cornflour
- 1/4 tsp cardamom powder (elaichi powder)
Method:
1. Boil milk on high flame in a large heavy bottomed pan. Once it comes to boil, turn the flame to medium.
2. Keep stirring at regular intervals, so that no layers of cream (malai) are formed. Keep scraping the sides of the vessel and mix it with the thickening milk.
3. Once the milk reduces to half of its quantity, add sugar, saffron and cardamom powder, and mix well.

4. After 5 minutes, mix cornflour with 1 tbsp of milk, and add this mixture to the pan.
5. Let it cook for 2 minutes and turn off the flame.
6. When the prepared mix reaches room temperature, add in the mango puree and stir well.
7. Refrigerate this mix for 2 hours and then your Mango Rabdi will be ready to serve.
Notes-
- If full cream milk is unavailable, use milk powder to thicken the milk.
- I have used the 'Kesar' variety of mango for the puree, but you can use any variety, as long as it is sweet.
- Ensure to stir the milk at regular intervals to prevent it from burning.
- It will stay fresh for 3-4 days (when refrigerated).
Mango Rabdi is delicious to eat as it is. You can decorate the top by the same method we followed in the Mango Burst Cake. However, you can also garnish it with finely chopped almonds or pistachios and add a few pieces of mango. Summer is the best time to enjoy this dessert, so do try it out before the season ends!
